Potato Leek Soup

The leek is considered the royal member of the onion family. They have a subtle earthy taste that cannot be compared. When combined with the ordinary potato, bathed in cream, and accentuated with savory herbs, their nobility is apparent. It may not be green, but you can’t get more Irish than the potato. For something truly scrumptious on this Saint Patty’s day, top with crumbled bacon.
