Onions have been cultivated for about 5,000 years and have a rich history: in Egypt they were an object of worship, Greek Olympians would fortify themselves by consuming copious amounts of onions, in India (as did many cultures) they were celebrated as a medicine, and in the Middle Ages they could be used as rent payments or wedding gifts. Legend has it that soupe a l’oignon was created when King Louis XV discovered he only had onions, butter and champagne at his hunting lodge, so he mixed them together. Each quart comes with three slices of homemade french bread and aged cheese. Serve by toasting bread, place on top of soup, sprinkle with cheese, and for best results pop under broiler to melt (make sure to use oven proof dishes!)
