Black Bean

When I lived in my first apartment in Austin, Texas my food repertoire was , ummmm, shall we say, limited. One of my staples was black bean soup, and I’d eat it any time, day or night. This wasn’t homemade, mind you, but canned, and let me tell ya, there’s a difference. There is no way that little can can encapsulate the true flavor of earthy black beans, sauteed veggies, fresh cilantro, and just the right amount of smoky chipotle peppers. The only thing in common with the soup then and now is the dollop of sour cream.

Price: $8/quart

Basic Ingredients: black beans, onion, green pepper, tomatoes, chipotle, cilantro, spices, vegetable broth.
