Moroccan Harira

It’s a complete meal in one bowl, just what someone would want if they hadn’t eaten since sunrise! Chick peas and lentils are simmered in a tomato-y broth, seasoned with a slew of spices and fresh herbs. Serve with flat bread and sweet mint tea.

Broccoli and Cheese

Broccoli is a relatively new vegetable to American tables, becoming popular in the 1920’s. It probably didn’t take long to come up with this pairing. This soup has been known to turn broccoli haters into true believers. Rich and creamy, the perfect stick to your ribs soup. And hey, it does have broccoli, so close your eyes and just enjoy the cheesey goodness.

David’s Chili

I know it must be mid winter when my partner starts pining for a big bowl of chili. Once he gets the idea, there’s no stopping him. Coming from Texas, where it is the official state dish, a great bowl was just a restaurant away. Now, living in Vermont the only way to fill this craving is to put on a big pot and let it simmer for hours. That’s ok, all the spices, onions, and beef, make our house smell like a chili cook-off. Top with grated cheese, sour cream, or the way my sweetie does, with saltines.

Local Organic Barley and Mushroom Soup

Barley, domesticated about 8,000 years, was the most prominent grain for thousands of years, some cultures even regarded it as sacred. Over the millennia, its status has declined markedly, but one barley product is still revered, beer. However, there are some culinary  occasions where you wouldn’t want anything else, namely, this soup. A hearty, chewy grain that has an almost creamy texture is made more nutritious with the array of veggies it is simmered with. Dried shiitake mushrooms pack a flavorful wallop, three ounces taste like a whole pound of fresh mushrooms! Finished off with a splash off sherry and aromatic herbs, this combination is sure to live through the ages.

Black Bean

When I lived in my first apartment in Austin, Texas my food repertoire was , ummmm, shall we say, limited. One of my staples was black bean soup, and I’d eat it any time of the day or night. This wasn’t homemade, mind you, but canned, and let me tell ya, there’s a difference. There is no way that little can can encapsulate the true flavor of earthy black beans, sauteed veggies, fresh cilantro, and just the right amount of smoky chipotle peppers. The only thing in common with the soup then and now is the dollop of sour cream.

Sweet Potato Soup

Sweet potatoes are promoted from side dish to the main attraction in this Asian inspired soup. The buttery, smooth puree is made more opulent with the addition of coconut milk, and the subtle flavors of lime juice and cilantro balance out the sweetness.

Hoppin’ John

Delivery Date, Tuesday January 1st…..Happy New Year!!

Ring in the new year with an old Southern tradition! This tasty, bacon filled black-eyed pea and rice soup is a must on new years day if you want good luck in the coming year. This custom originated in the South for sure, but variations abound when it comes to the origins of the name. Some say it was named after a ritual where children would hop around the table once before eating, or an old man in the Carolinas who would schlep this soup in the streets, or, my favorite, after a one-legged cook named John!

Curried Peanut Soup

I had to offer a tradition of the holiday season, although it may not be a tradition most are familiar with!  Peanut soup is common all over Africa and served customarily during Kwanzaa. This is a lesser known version, which I believe is from Kenya, that is made with creamy, piquant buttermilk. Green bananas are fried, seasoned, and added at the end. This soup is very rich and filling! Serve it with warmed flat bread for dipping and a simple salad.

Fassolátha Me Spanáki…

…or bean soup with spinach, in case you don’t speak Greek! This is considered a national dish of Greece and there are countless variations. They all have in common an ample amount of veggies and a hearty dose of Mediterranean flavors, infused healthily with plenty of olive oil. It’s absolutely perfect when served with a loaf of crusty bread, feta cheese, and kalamata olives on the side. If you close your eyes tight you just might feel the white sand between your toes and hear the waves lapping.
